1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
4 tbsp olive oil
4 cloves garlic, minced
1/2 cup dry white wine
1/4 cup chicken broth
1/4 cup lemon juice
1/4 cup butter
1/4 cup chopped fresh parsley
1/4 tsp red pepper flakes
Salt and pepper to taste
2 cups cooked rice
1/2 cup grated parmesan cheese
1/4 cup heavy cream
Instructions
Season chicken with salt and pepper.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove from skillet and set aside.
Add remaining 2 tbsp olive oil to the skillet. Add garlic and cook until fragrant.
Pour in white wine and cook for 2 minutes, scraping up any browned bits from the bottom of the skillet.
Stir in chicken broth, lemon juice, butter, parsley, and red pepper flakes. Bring to a simmer and cook for 5 minutes, or until sauce has slightly thickened.
Stir in cooked chicken and heat through.
Prepare rice according to package instructions. Stir in parmesan cheese and heavy cream.
Serve chicken scampi over creamy garlic parmesan rice.
