- 1 cup vegan mayonnaise
- 1/2 cup vegan parmesan cheese
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon black pepper
- 1/2 cup chopped vegan chick’n
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- Cook pasta according to package directions.
- In a large bowl, whisk together vegan mayonnaise, vegan parmesan cheese, lemon juice, garlic, Dijon mustard, and black pepper.
- Add cooked pasta, vegan chick’n, red onion, and celery to the bowl.
- Toss to coat.
- Chill for at least 30 minutes before serving.
