A creamy and flavorful Chick’n Caesar Pasta Salad.

Ingredients

  • 1 pound pasta
  • 1 cup vegan mayonnaise
  • 1/2 cup vegan parmesan cheese
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped vegan chick’n
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery

Instructions

  1. Cook pasta according to package directions.
  2. In a large bowl, whisk together vegan mayonnaise, vegan parmesan cheese, lemon juice, garlic, Dijon mustard, and black pepper.
  3. Add cooked pasta, vegan chick’n, red onion, and celery to the bowl.
  4. Toss to coat.
  5. Chill for at least 30 minutes before serving.

Notes

  • Adjust the amount of vegan mayonnaise to your liking.
  • Add other vegetables, such as chopped tomatoes or cucumbers.
  • For a spicier salad, add a pinch of red pepper flakes.
