  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh spinach, chopped
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 lb pasta (fettuccine, spaghetti, or penne)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  4. Add garlic and sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer.
  6. Stir in Parmesan cheese and spinach. Cook until cheese is melted and spinach is wilted.
  7. Add cooked pasta to the skillet and toss to coat.
  8. Serve immediately.
