- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh spinach, chopped
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 1 lb pasta (fettuccine, spaghetti, or penne)
- Cook pasta according to package directions. Drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
- Add garlic and sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese and spinach. Cook until cheese is melted and spinach is wilted.
- Add cooked pasta to the skillet and toss to coat.
