- 1.5 lbs boneless, skinless chicken thighs
- 1 lb green beans, trimmed
- 4 tbsp butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- Season chicken thighs with salt, pepper, and oregano.
- Melt 2 tbsp butter in an oven-safe skillet over medium-high heat.
- Sear chicken for 2-3 minutes per side until golden brown.
- Remove chicken from skillet and set aside.
- Add green beans to the skillet and cook for 5 minutes, stirring occasionally.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and lemon juice, then stir in lemon zest and remaining 2 tbsp butter.
- Place chicken back into the skillet on top of the green beans.
- Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and green beans are tender.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- You can substitute chicken breasts for chicken thighs, but adjust cooking time accordingly.
- Serve over rice or pasta.
