One-pan lemon garlic butter chicken with green beans for a quick and easy dinner.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 lb green beans, trimmed
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs with salt, pepper, and oregano.
  3. Melt 2 tbsp butter in an oven-safe skillet over medium-high heat.
  4. Sear chicken for 2-3 minutes per side until golden brown.
  5. Remove chicken from skillet and set aside.
  6. Add green beans to the skillet and cook for 5 minutes, stirring occasionally.
  7. Add garlic and cook for 1 minute until fragrant.
  8. Pour in chicken broth and lemon juice, then stir in lemon zest and remaining 2 tbsp butter.
  9. Place chicken back into the skillet on top of the green beans.
  10. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and green beans are tender.
  11. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can substitute chicken breasts for chicken thighs, but adjust cooking time accordingly.
  • Serve over rice or pasta.
