Smoked Sausage & Cheesy Potato Casserole

A hearty and comforting casserole with smoked sausage, potatoes, and cheese.

Ingredients

  • 1 lb Smoked Sausage, sliced
  • 5 medium Potatoes, peeled and cubed
  • 1 medium Onion, chopped
  • 1 can (10.75 oz) Condensed Cream of Mushroom Soup
  • 1 cup Milk
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Monterey Jack Cheese
  • Salt and Pepper to taste
  • 2 tbsp Butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil potatoes until tender. Drain and set aside.
  3. In a large skillet, sauté onion until softened. Add sausage and cook until lightly browned.
  4. In a large bowl, combine potatoes, sausage mixture, cream of mushroom soup, milk, salt, and pepper.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. Top with cheddar and Monterey Jack cheeses. Drizzle with melted butter.
  7. Bake for 30-40 minutes, or until golden brown and bubbly.
  8. Let stand for a few minutes before serving.

Notes

  • You can substitute other types of cheese.
  • Add garlic powder for extra flavor.
  • Use a different type of smoked sausage if desired.
