Description

A simple and healthy taco casserole perfect for Weight Watchers followers. Packed with flavor and easy to make.


Ingredients

Scale
  • 1 lb lean ground turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup fat-free refried beans
  • 6 small corn tortillas
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground turkey in a skillet, then add taco seasoning and water as directed on packet.
  3. Spread refried beans in the bottom of a baking dish.
  4. Layer tortillas over the beans, then top with cooked turkey mixture.
  5. Pour salsa over the turkey, then sprinkle cheese evenly.
  6. Bake for 20 minutes until cheese melts.
  7. Top with tomatoes, olives, and cilantro before serving.

Notes

  • Store leftovers in refrigerator for up to 3 days
  • Use whole wheat tortillas for extra fiber
  • Add jalapeños for extra heat
