A simple and healthy taco casserole perfect for Weight Watchers followers. Packed with flavor and easy to make.
Ingredients

- 1 lb lean ground turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup fat-free refried beans
- 6 small corn tortillas
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 2 tbsp chopped fresh cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground turkey in a skillet, then add taco seasoning and water as directed on packet.
- Spread refried beans in the bottom of a baking dish.
- Layer tortillas over the beans, then top with cooked turkey mixture.
- Pour salsa over the turkey, then sprinkle cheese evenly.
- Bake for 20 minutes until cheese melts.
- Top with tomatoes, olives, and cilantro before serving.
Notes
- Store leftovers in refrigerator for up to 3 days
- Use whole wheat tortillas for extra fiber
- Add jalapeños for extra heat
